Wanted to give an update….made them with 4 eggs and 3/4 cup of southwest egg beaters with baby spinach, arugula, bacon & cheese. They turned out great!! I used silicone molds which made it very easy for them to come out when done. Plus the silicone molds are dishwasher safe, a great bonus!

Thank you for the reply. Apologies for confusion….I was thinking about using the southwest egg beaters, they already have peppers in them and adding chopped prosciutto, spinach and shredded Swiss. I was not talking about the egg whites. My original thought was 4 real eggs and the rest the southwest egg beaters to avoid all the cholesterol from 8 full eggs. Looking forward to trying it this evening and hoping to make them in silicone molds to make it easier to get them out.
