Hi Karen, we typically recommend baking in the center of the oven, but every oven is different so if you have better success baking on a lower rack, you can keep doing it that way. Hope you love the bread!

Hi Sally…I’m reading that some bakers substituted molasses or maple syrup for the honey when they made this bread. I wonder if pure cane syrup (which tastes like a lighter version of molasses) can also be substituted for the honey? Or, how about Fiji ginger syrup? It’s got a nice tang about it! Thank you!!

This sounded good,. I left it sit overnight for 17 1/2 hours. It didn’t rise much. After I put it in the pan, it took 1 1/2 hours to rise in my 80 degree proofing Wolfe toaster oven. I baked it for 50 minutes, 195 degrees. I used fresh fast acting yeast, measured everything in grams and have a lame. I covered it halfway with foil. The bread is very dense, does not look like yours. However, it is delicious toasted with a crunch when chewed. I guess that’s the oasts. Thanks Sally.

We’re so glad you enjoyed this bread! No-knead breads are inherently a tad denser than, say, sandwich bread, but if it seemed especially dense then it’s possible it was over-handled a bit, which can pop all the air bubbles in the dough. Hope this helps for next time!
